Designed as a party-sized pre-mixed that's loaded with the essence of the Christmas time, rendering it perfect for hosting a festive gathering. Reserve the remaining syrup to use in brunch beverages, sweets, or to make additional servings of bikinis.
Bikini
Yields 10 servings
To make the Citrus Syrup (makes 750ml)
300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g caster sugar
Ingredients for the Cocktail (produces 850ml, enough for 10)
400ml premium vodka
100ml classic gin
150ml peach liqueur
200ml clementine cordial (from the recipe above)
Fresh cranberries, to garnish
Mandarin essential oil, for finishing
Directions
Making the Syrup: Combine all the components into a pot, heat until it reaches a light boil, stirring until the sugar dissolves. After that, turn off the stove allowing it to cool completely. Pour into an clean bottle, seal and store chilled, it will last for up to one month.
Preparing the Premix: Pour all the spirits and syrup into one big jug, leave to sit for one hour, then pass it through preferably using cheesecloth, so it's fully clarified.
For serving: Pour 85ml of the cocktail base into a stirring glass containing ice, and stir gently for one minute until cold. Filter into a chilled martini glass or equivalent, garnish with a few cranberries and finish by giving it a quick spritz of mandarin oil over the top.
